AVOCADO LIME POPSICLES


This was easy to make and comes out very creamy. I would definitely double the lime juice. It tasted too sweet before freezing but just right after freezing. It's very avocadoy so if you don't like the flavor of avocado or guac, this one's not for you.

I forgot to boil the sugar and water and instead just put everything in the blender. They still came out great and I will make them again. Next time I'll see if dissolving the sugar changes the overall flavor or texture.


AVOCADO LIME POPSICLES

INGREDIENTS

1 avocado
1 cup coconut cream
¼ cup maple syrup
1 banana
¼ cup lime juice
1 lime zest

INSTRUCTIONS

Cut avocado length wise, remove pit, scoop out avocado flesh using a spoon and place in am high speed blender or food processor along with  coconut cream, maple syrup, banana, lime juice and lime zest. Process until smooth, scraping down sides. Pour into popsicle mold evenly, insert popsicle sticks and freeze for about 6 hours.
